Indo-Chinese food holds a special place in Indian hearts, and vegetable fried rice is one of its most loved dishes. The good news is that you can make a version at home that is fresher, less oily and often tastier than takeaway. The secret is simple: use cold, cooked rice, cook on high heat and keep the vegetables crunchy. It is also a brilliant way to use up leftover rice, and it makes a cheerful weeknight dinner that the whole family will enjoy.

    Why you will love it

    • Quick: Ready in about 20 minutes.
    • Uses leftovers: Day-old rice works best.
    • Colourful: Packed with vegetables.
    • Customisable: Add paneer, egg, tofu or chicken.

    Serves and timing

    • Serves: 3
    • Preparation time: 10 minutes
    • Cooking time: 10 minutes

    Ingredients

    • 3 cups cooked rice, preferably cold and a day old (basmati works well)
    • 2 tablespoons oil
    • 4 cloves garlic, finely chopped
    • 1 inch ginger, finely chopped
    • 1 to 2 green chillies, finely chopped
    • 3 to 4 spring onions, whites and greens chopped separately
    • 1 small carrot, finely diced
    • 8 to 10 French beans, finely chopped
    • 1 small capsicum, finely diced
    • 1 cup shredded cabbage
    • 1 1/2 tablespoons soy sauce
    • 1 teaspoon vinegar
    • 1/2 teaspoon black pepper powder
    • 1/2 teaspoon sugar (optional)
    • Salt to taste
    • 1 teaspoon chilli sauce (optional)

    Steps

    1. Prepare the rice: If cooking fresh rice, cook it so the grains are separate and not mushy. Spread on a plate to cool completely, ideally refrigerate for a few hours. Break up any lumps with your fingers.
    2. Prep everything first: Chop all the vegetables finely and keep sauces ready. Fried rice cooks very quickly, so there is no time to chop once you start.
    3. Heat the wok: Heat oil in a wok or large kadai on high heat until it shimmers.
    4. Add aromatics: Add garlic, ginger, green chillies and spring onion whites. Stir-fry for 30 seconds without letting the garlic burn.
    5. Cook the hard vegetables: Add carrots and beans. Stir-fry on high heat for 2 minutes.
    6. Add the rest: Add capsicum and cabbage and toss for another minute. The vegetables should stay bright and crunchy.
    7. Add the rice: Tip in the cold rice and toss well, spreading it across the wok so it heats evenly and picks up a slightly smoky flavour.
    8. Season: Pour soy sauce and vinegar around the edges of the wok rather than directly on the rice. Add pepper, sugar, salt and chilli sauce if using. Toss for 2 to 3 minutes.
    9. Finish: Turn off the heat and add the spring onion greens.
    10. Serve: Serve hot.

    Tips for restaurant-style fried rice

    • Cold rice is key. Freshly cooked, warm rice turns sticky and clumpy.
    • Use high heat and keep everything moving so it fries rather than steams.
    • Do not overcrowd the wok. For larger batches, cook in two rounds.
    • Go easy on soy sauce. Too much makes the rice dark and salty.
    • Chop vegetables small and even so they cook quickly.

    Variations

    • Egg fried rice: Scramble two eggs in the wok before adding vegetables, then mix in.
    • Paneer fried rice: Add pan-fried paneer cubes at the end.
    • Schezwan fried rice: Stir in a tablespoon or two of Schezwan sauce for a spicy kick.
    • Brown rice version: Use cooked brown rice for extra fibre.

    Serving ideas

Serve vegetable fried rice with gobi manchurian, chilli paneer or a simple vegetable manchurian gravy. A small bowl of chilli vinegar (sliced green chillies soaked in vinegar) on the side is a classic touch. A bowl of hot and sour soup completes the meal.

    Storage

Refrigerate leftovers in an airtight container for up to a day. Reheat in a hot pan with a sprinkle of water.
