When you need a quick, wholesome meal without a long list of dishes, vegetable pulao is a lifesaver. Long-grain basmati rice cooked with fragrant whole spices and colourful vegetables comes together in one pot in about 30 minutes. It is mild enough for children, filling enough for adults and packs beautifully into lunch boxes.

    Why this recipe works

    • One pot: Fewer dishes to wash.
    • Flexible: Use whatever vegetables you have in the fridge.
    • Balanced: Add paneer or soya chunks to boost protein.
    • Lunch-box friendly: It stays good at room temperature for a few hours.

    Serves and timing

    • Serves: 3 to 4
    • Soaking time: 20 minutes
    • Cooking time: 25 minutes

    Ingredients

    • 1 1/2 cups basmati rice
    • 2 tablespoons ghee or oil
    • 1 teaspoon cumin seeds
    • 1 bay leaf
    • 1 small stick cinnamon
    • 3 to 4 green cardamom pods
    • 4 cloves
    • 1 star anise (optional)
    • 1 large onion, thinly sliced
    • 1 teaspoon ginger-garlic paste
    • 1 to 2 green chillies, slit
    • 2 cups mixed vegetables (carrots, beans, green peas, cauliflower, potatoes), chopped
    • 1/2 teaspoon garam masala
    • Salt to taste
    • 2 3/4 cups water (for pressure cooker, use 2 1/4 cups)
    • 2 tablespoons chopped mint and coriander
    • A few cashews (optional)

    Steps

    1. Rinse and soak the rice: Wash the basmati rice gently in water three or four times until the water runs mostly clear. Soak for 20 minutes, then drain.
    2. Temper the spices: Heat ghee in a heavy-bottomed pot. Add cumin seeds, bay leaf, cinnamon, cardamom, cloves and star anise. Fry for about 30 seconds until fragrant. Add cashews if using and fry until light golden.
    3. Cook the onions: Add the sliced onions and fry on medium heat until light golden, about 5 minutes.
    4. Add aromatics: Stir in the ginger-garlic paste and green chillies and cook for a minute.
    5. Add vegetables: Add the mixed vegetables and saute for 3 to 4 minutes. Sprinkle in garam masala and salt.
    6. Add the rice: Add the drained rice and stir very gently for a minute so each grain is coated with ghee. Avoid breaking the grains.
    7. Add water: Pour in the water, add the mint and coriander and taste the water; it should be slightly salty.
    8. Cook: Bring to a boil, then reduce the heat to the lowest setting, cover tightly and cook for 12 to 15 minutes until the water is absorbed and the rice is tender. In a pressure cooker, cook for one whistle on medium heat.
    9. Rest: Turn off the heat and let the pulao rest, covered, for 10 minutes.
    10. Fluff: Gently fluff the rice with a fork before serving.

    Tips for fluffy pulao

    • Use aged basmati rice for longer, separate grains.
    • Do not skip the soaking, which helps the grains cook evenly.
    • Measure water carefully. Too much water makes pulao mushy.
    • Avoid stirring once the water is added.
    • Let it rest before opening the lid, so the grains firm up.

    Variations

    • Paneer pulao: Add lightly fried paneer cubes along with the vegetables.
    • Matar pulao: Use only green peas for a classic, simple version.
    • Coconut pulao: Replace half the water with thin coconut milk for a South Indian touch.
    • Brown rice pulao: Use brown rice and increase water and cooking time.

    Serving ideas

Serve vegetable pulao with cucumber or boondi raita, a simple dal, papad and pickle. A roasted papad adds a pleasing crunch. It also pairs nicely with paneer butter masala or a mild kadhi for a weekend meal. For lunch boxes, pack it with a small container of raita and a few slices of cucumber.

    Storage

Refrigerate leftovers in an airtight container for up to two days. Sprinkle a little water before reheating so the rice stays moist.
